A new food truck in Coquitlam is bringing fluffy egg sandwiches to the masses.
Parked at Lafarge Lake at 1251 Pinetree Way, Coquitlam, near Town Centre Park and Douglas College, the @egg.blanket.van is the newest offering to the city's food truck community.
Egg Blanket opened on the weekend and has already been garnering good reviews on Instagram.
Apparently the fluffy egg sandwich is a popular Korean trend and not only for a morning snack.
This food truck has some hearty offerings that could be for lunch and dinner as well.
The selection includes:
- Prawn and Cheese
- Pepperoni and mozzarella with pizza sauce
- Black forest ham, cheese and tomato
- Bacon, cheese, and tomato
- Avocado
Sides, including churros, rice cakes and fries, as well as drinks, are also available.
According to the food truck's Instagram bio, the van is open every day but Thursday from 11 a.m. to 7 p.m.
